Lemon Garlic Broccolini

Broccolini is the tall delicate cousin of broccoli, and is rarely found in grocery stores (at least ours) so we grab it when we can as an alternative vegetable side. The taste is pretty similar to broccoli.  We made this recipe in particular with Lemon-Parmesan breaded chicken.


Ingredients:
2 bunches broccolini (about 1.5 pounds)
3 cloves minced garlic
juice of half a lemon
salt, pepper, olive oil


Directions:
Wash and trim the ends of the stalk off of the broccolini
Bring a pot of heavily salted water to boil and blanch the broccolini for 2-3 minutes

Strain in a colander

While straining, heat 2 T olive oil (or butter) in the same pot over medium heat, and sautee the garlic for 2 minutes

Add the broccolini back to the pot and continue to cook for about 3-4 more minutes, making sure the garlic and oil are coating each piece.
Add lemon juice, stir to combine
Season to taste with salt and pepper
