Spicy Homemade Chorizo

Whenever you have a recipe that calls for ground chorizo, there's no need to hunt around for it at the store and pay crazy prices.  It is so easy to make at home and you can adjust the flavor and spiciness to your taste so it goes perfectly in your recipe!  We used this one to make chorizo and quinoa stuffed peppers.
Ingredients:
1 lb ground pork
1/2 t chile powder
1/2 t sweet smoked paprika
1/2 t spicy smoked paprika
1/2 t cayenne pepper
1/4 t red pepper flakes
2 cloves garlic, minced
1 T Mexican oregano
black pepper
1/4 cup red wine
3 t apple cider vinegar
Directions:
Combine the pork with all dry ingredients in a bowl and mix with your hands.  Add wine and vinegar, and mix again until thoroughly incorporated.  Chill in a bowl for at least 2-3 hours or overnight until ready to use.


This is great in dishes on it's own, or in addition to ground beef to make spicy tacos or meatballs.  It was awesome in our stuffed poblano peppers!
